SUNKEN LOAVES: WHAT WENT WRONG

• Was the dough quite wet during the kneading cycle?

Reduce the liquid in the recipe next time you bake that bread or add flour as it is mixing, 1 tablespoon at a time, until the dough forms a satiny-smooth ball.

• Did you use a fast-rising or instant yeast?

The dough may have overproofed. Use ½ teaspoon fast-rising or instant yeast per cup of flour.

• Did you omit or greatly reduce the amount of salt?

The salt helps prevent the dough from overproofing. For the bread to rise properly, you need to add some salt. If you want to reduce the amount of sodium, substitute Morton Lite Salt for table salt.

• Was the machine knocked or the lid dropped near the end of the rising phase?

A sudden jolt can deflate a loaf.

• Is the bread machine in a drafty location?

A cold draft can cause a bread to sink.

• Do you live at an altitude above 3,000 feet?
